Organic cardamom carrageen panna cotta and prunes

Ingredients:

FOR THE CARRAGEEN PANNA COTTA
800ml full-fat organic milk (we use Glenisk)
8g dried carrageen/Irish Moss (we use Wild Irish Seaweed organic)
2 tsp organic cardamom, ground (we use Steenbergs)
1 organic vanilla pod, split in half (like Green Earth Organics)
3 tsbp organic sugar (like Gem)

FOR THE BISCOTTI
250g organic plain flour (we use Odlums)
2 large organic, free-range eggs, beaten (support your local farmer or try your local bucher, but some larger supermarkets also stock too)
125g organic sugar (as above)
100g peeled organic pistachios
100g organic dried cranberries (Crazy Jack on Ocado, for example)
1/2 tsp kosher salt (we use Oriel from Co. Louth)
1/4 tsp fennel seeds (we use Steenbergs), ground in a pestle and mortar
1 tsp baking powder (we always use Doves Farm in our baking)

FOR THE STEWED PRUNES
450g organic prunes, pitted/stoned (like Planet Organic)
200g organic sugar (as above)
550g spicy, full-bodied red wine, like Rioja (organic if possible like this one from Quintessential Wines)
Peel of half a large organic orange or clementine
1 organic cinnamon stick (we use Steenbergs)
